The Cellar
The Cellar vinifies lots of different kinds of wine grapes. We produce white, red, young and old wines.
The most typical kind of grape is from Friularo di Bagnoli D.O.C.G.,an autochthonous wine with ancient origins.
A different kind of wine for the acidity and the tannicity. It’s extremely versatile and it reveals a fantastic predisposition to make structured wines. With the white vinification we get a fresh, gold coloured, sparkling wine.
OUR WINES
SPARKLING WINES
The “classic method” consists in letting it with the yeasts before the disgorgement for at least 3 years. This method gives to the wine a “crust of bread”’s aroma together with a fruity aroma thanks to the peach and the morello cherry.
Here at “Dominio” we produce also a “Prosecco Doc” called “Broletto”, a sparkling wine made with “Glera” grapes: a combination of grapes which complement each other.
RED WINES
These wines are made with varietal purity or with grapes blend “Bordolese”: the “Bagnoli Rosso Riserva” in which they are assembled in similar proportions.
Our “Red wines” aged in “Rovere” wood for at least 2 years, later they can be bottled.
WHITE WINES
The grapes used in this kind of wine are Sauvignon and Chardonnay with an extra 20% Friulara’s grapes, a red grape vinified in white: this make the wine be easily distinguished and has a correct acidity.
SPECIAL WINES
DESSERT WINES
These grapes are pushed and slowly fermented for one year or more. Later, they are refined in Rovere’s caratelli for 2 years and it gives an unique aroma to the wine. It’s also presented in a funny pack of “Zaletti”, a typical kind of candies of venetian’s 700.
