The Cellar

The Cellar vinifies lots of different kinds of wine grapes. We produce white, red, young and old wines.

The most typical kind of grape is from Friularo di Bagnoli D.O.C.G.,an autochthonous wine with ancient origins.

A different kind of wine for the acidity and the tannicity. It’s extremely versatile and it reveals a fantastic predisposition to make structured wines. With the white vinification we get a fresh, gold coloured, sparkling wine.

OUR WINES

SPARKLING WINES

“Bagnoli”’s sparkling white wine is produced with Friularo’s grapes with a classic method, letting the wine fermenting in the bottle.

The “classic method” consists in letting it with the yeasts before the disgorgement for at least 3 years. This method gives to the wine a “crust of bread”’s aroma together with a fruity aroma thanks to the peach and the morello cherry.

Here at “Dominio” we produce also a “Prosecco Doc” called “Broletto”, a sparkling wine made with “Glera” grapes: a combination of grapes which complement each other.

RED WINES

“Dominio”s red wines are made with typical grapes from “Bagnoli Classico”, the “Friularo”, the “Merlot” and the “Cabernet”, produced by the grapes blend of Cabernet Sauvignon, Cabernet Franc and Carménère.

These wines are made with varietal purity or with grapes blend “Bordolese”: the “Bagnoli Rosso Riserva” in which they are assembled in similar proportions.

Our “Red wines” aged in “Rovere” wood for at least 2 years, later they can be bottled.

WHITE WINES

We produced a white, fruity and sapid wine with Sant’Andrea’s grapevines, included in DOC type “Bagnoli Classico”.

The grapes used in this kind of wine are Sauvignon and Chardonnay with an extra 20% Friulara’s grapes, a red grape vinified in white: this make the wine be easily distinguished and has a correct acidity.

SPECIAL WINES

The “Vendemmie Tardive” are a particular type of wine produced  by “Dominio”: the red “Vendemmia Tardiva” is produced with “Friulara”’s grape which is harvested after San Martino’s summer (11 November). This kind of wine is strong and has a typical aroma of Morello cherry and “Violetta”; the white “Vendemmia Tardiva” is produced with Chardonnay and Sauvignon, harvested in the end of October, and mixed with a 20% of Friularo. It gives to the wine the perfect acidity and gives birth to “San Lorenzo”s wine which reminds us the famous “Sauterne”. The main element in in this kind of wine is “Botritys Cinerea” (Noble rot), which has important and particular aromas.

DESSERT WINES

The “Friularo Passito” is our speciality and it’s produced only with “Friulara”’s grape wines  harvested in October and November. Later it’s let to rest in the old granaries of “Dominio”up to “Easter”.

These grapes are pushed and slowly fermented for one year or more. Later, they are refined in Rovere’s caratelli for 2 years and it gives an unique aroma to the wine. It’s also presented in a funny pack of “Zaletti”, a typical kind of candies of venetian’s 700.

Bag in Box

The “Bag in Box” is a kind of packaging for the wine which allows to have fresh wines. The wine is never in contact with air and is protected by light. The sack has an inert part which is in contact with wine. It also has an external silver layer which protects the wine by the ultraviolet rays and it’s filled by vacuum processing and put in packs of 5 liters. Then it’s moved into suitable containers in “Ceramica d’Este” for an elegant presentation.

DISTILLATES

The Grappa and Brandy of “Dominio” are “Friulara”’s grape products. The grape is typical of Bagnoli. Both are produced with discontinued Distiller. The Brandy is let getting older in caratelli for at least 10 years.
